1 pound of beans Islands
1 large white onion, quartered
2 tablespoons vegetable oil
2 sprigs fresh epazote or 1 c. Tea epazote, decay, if desired
1 teaspoon salt and pepper
6 slices bacon
2 cups salsa (I like spicy)
Beer, 1 / 2 cup
1 cup water
4 ounces frozen pepper (spicy Habanero Jelly recipe or your favorite-# 68981)
1 teaspoCumin
1 teaspoon paprika
1 tsp cumin
1 tablespoon fresh cilantro or parsley
2 smoked turkey wings

6-8 servings Change size or US / metric
Change to Servings: U.S. Metric

Canary Beans, Peru (pigeon pea)
Favorite Peruvian beans, soft white / yellow bean unique taste for most Americans to soak beans, soups and stews .---- Soak 1 cup of beans overnight or quick by 4 cups boiling water 3 minutes to leave, cover and stand for 2-3 hours, then cook for 30-40 minutes until they are soft, YIELD 2 1 / 2 cups.

They are slightly smaller than Pintos.
