Acorn squash ravioli with walnuts

Before you nuts fried in butter. I think it shows the wonderful nuts nuttin. You can grill in the oven or stove. Most recipes that call for brown butter and balsamic vinegar is not, I found it rather bland without it. The addition of balsamic vinegar really enlivened the dish.

Ravioli:

2 oz goat cheese
3 cloves roasted garlic
Pumpkin ½
Pinch of nutmeg
Salt to taste
freshly ground black pepper
Wonton wrappers

Sauce:

½ cup toasted walnuts - chopped
1 stick butter
1 teaspoon balsamic vinegar
1 / sage leaves 2 tablespoons of tea - chopped

Preheat the oven to 400 degrees. Cut acorn squash in half, remove seeds and roast cut side down on baking sheet for 45 minutes to 50 minutes. Pierce meat with a fork to check doneness. Cool.

When cool enough to handle, scoop out the flesh of the pumpkin and discard the skin. Mashed pumpkin, goat cheese, salt, pepper, roastedGarlic and a pinch of nutmeg. Mix well.

to assemble the ravioli:

I cut the leaves wonton perfect squares. I wanted to make me small so I put a spoonful of tea (not cumulative) filling in the center of the wonton sheet. Moisten edges and fold in half, to form a triangle. Set aside, covered.

Boil a large pot with salted water. Drop ravioli into boiling water. This happens when it comes to the surface. It may be 1 minute.

Brown butter in a heavy frying pan over medium heat. Nuts, sage and balsamic vinegar in the sauce, and from the heat.

This Makes 4 servings.
